The Sun Comes Back
Today is the official for the sun here in Harstad, North of Norway. Yes, it comes back again after a while under the horizon for about 1,5 months. I never imagine that I could live here without sun at all!
It will take a while until the sun comes perfectly. Day by days will the sun comes out from horizon quietly slow but surely. Until it never goes down (well it goes down but just for a few minutes and then comes again over horizon. Then Midnight Sun will be here on 22.mai to 18 july. No darkness in this periods except if its cloudy.

Braised Pork In Sweet Soya Sauce
Here's a typical Indonesian-Chinese recipe. Braised pork in sweet soya sauce will make you want it, again and again.
Here's the recipe:
1 kg pork ribs (dices)
1 onion (fine diced)
7 tablespoon sweet soya sauce (Indonesian soya sauce called kecap manis or ketjap manis)
a thumb of ginger (bruised)
a little bit salt
1 tablespoon sesame oil
2 tablespoon oyster sauce
1 tablespoon dark sugar (only if you want more sweeter)
1 star anis
5 cloves of garlic (fine chopped)
8 dl of water
This is how you do it:
Get your pan hot and then set it in medium heat. Add pork and fry with their own fat until golden brown. Set aside.
Fry onion with the pork fat for a min then add garlic and ginger until the fragrance comes out.
Mix all together include the rest of ingredients in a pot and let it simmers in 2.5 hours until it's tender.
Your braised pork is ready! Served with rice and salad.
