While I'm waiting forward to Christmas night so I'm making "krumkaker" not quite sure what is it in english. But these cookies are so good and crunchy!! You will need a "krumkaker" iron.
The norwegian make it in christmas time and eat it with cloudberry cream. I can tell you that it's soooo good.
KRUMKAKER (about 23-25 pieces)
200 egg (around 3 big size of egg)
200 melt butter
200 flour
200 g sugar
3 tablespoon of water
1 teaspoon of vanilla sugar
PS. the weight of egg, sugar, butter and flour have to be equal.
This is how you do it
Mix the eggs and sugar til it's fluffy (15-20mins). Add flour and butter to a bowl and the rest og ingredients. Mix it well and leave it about 30mins. You will see it's just like a cake batter.
Get your iron hot and give a tablespoon of batter in the middle. You can counting to 17 and it's done! Don't get any longer because you will burn it.
Roll it into any shape you like. I use my chopstick to help me to roll it. Be carefull it's hot!
The classic norwegian form is like an ice cream cone. But since I don't have the stuff to make it like that. I'm just roll it :)
