KRUMKAKER

While I'm waiting forward to Christmas night so I'm making "krumkaker" not quite sure what is it in english. But these cookies are so good and crunchy!!  You will need a "krumkaker" iron.

The norwegian make it in christmas time and eat it with cloudberry cream. I can tell you that it's soooo good.

KRUMKAKER (about 23-25 pieces)

200 egg (around 3 big size of egg)
200 melt butter
200 flour
200 g sugar
3 tablespoon of water
1 teaspoon of vanilla sugar

PS. the weight of egg, sugar, butter and flour have to be equal.

This is how you do it

Mix the eggs and sugar til it's fluffy (15-20mins). Add flour and butter to a bowl and the rest og ingredients. Mix it well and leave it about 30mins. You will see it's just like a cake batter.

Get your iron hot and give a tablespoon of batter in the middle. You can counting to 17 and it's done!  Don't get any longer because you will burn it. 

Roll it into any shape you like. I use my chopstick to help me to roll it. Be carefull it's hot!

The classic norwegian form is like an ice cream cone. But since I don't have the stuff to make it like that. I'm just roll it :)

Merry Christmas and Happy New Year!

This is our first Christmas Tree after 2 years we couldn't decide it if we want a real tree or a plastic one. Today we decided to have plastic fantastic. Grove Rundstykker - Healthy Dinner Rolls with rye, whole grain and flaxseed.

22 stk @100g

Ingrediens:
1 pose gjær
250g kornbrød
250g grovbørd
200g rugbrød
1 koppe sammalt spelt
1 koppe sammaltrug
3 ss linfrø
3 ss sesamfrø
1ts salt
100g tine smør
1 lt lunken vann

Hvetemel til passe deig ca.150-250g.

Litt melk for pensler rundstykker.
Sikt sammaltrug-grovmalt fra mollerens. Du vil få grov mel derfra hvor du kan strø oppi rundstykker.

Fremgangsmåte:

Miks lunken vann og gjær i kjøkkenmaskin eller i en bolle.  Tilsett tørre ingrediens litt og litt. Blandes godt. Tilsett hvetemel forsiktig.

Hvile deigen i en time eller til den dobble opp. (kan tas til 1.5 timer)

Dele opp til 22 stk @100g. Heves i ca.45min. Pensle med melk.
Sett ovn i 200 grader. Bake i ca. 15min.

Kan fryses! Ta opp og bake i ca. 5min i 210 grader for å få de ferske igjen.

Ps. This recipe is only available in norwegian. Because the ingredients that I used come from one manufature called Mollerens. These are the healthy dinner rolls which contains of rye, whole grains and flaxseeds.

Dinner Rolls

(10 pieces @100g)

Ingredients

500g bread flour
25g butter
3.5dl milk
25g yeast
2 tablespoon sugar
1/4 teaspoon cardamoms
1/2 teaspoon salt

1 eggyolk+3 tablespoon milk to brush the buns.

This is how you do it:
Warm milk and butter together in microwave. Get this liquid around 38 C and pour it into bowl.
Add yeast and sugar into the liquid. Mix it well.
Get the rest of ingredients and mix it together about 10mins with kitchen machine. Rest the dough about 1 hour or until it raised to double. (it can take 1.5 hour in the winter time)

Devide to 10 pieces @100g and rest again for about 30-45mins. Brush your rolls with the mix of eggyolk and milk. (it will make shinning)

Bake in the middle of oven 200C in 15mins.

Lussekatter - Lucia sweetbun celebrate St. Lucia's day 13th December

Today is the 13th of December. 2 weeks left until the Christmas day.

I think it was 5 years ago I've baked Lussekatter.  It was a long time ago. Well this   sweetbun called as Lussekatter in norwegian. It's a bit special because of the saffron.

Here' the recipe of lussekatter (10 pieces)

2.5 dl warm milk
75g butter
75g sugar
350g bread flour
25g yeast
0.5g saffron

for decoration: little bit of raisin.

ps. you will need an extra 50g flour when you're working and form the dough.

This is how you do it:

Warm the milk and the butter in a bowl. Make sure the temperature of this blanding around 38 C. 

Put the yeast on it and stir it.


Get the rest of ingredients except raisin.
Work with the dough about 10mins. I use my stand mixer to work for me. Then  let the dough rest for 1 hour.

Devide the dough in to 10 pieces and form it like S letter. Decorate with 2 raisins on each dough. Rest again about 30mins under kitchen cloth.

Bake in about 10min in 200C.

Pistachio and cranberries biscotti with a hit of orange zest

It's thursday night now and after cleaned up my kitchen becoz I need place for a red bosch stand mixer that I've just got from a friend of mine who leaving Norway for good. Then I thought to bake a biscotti for a chritsmas gift and try the machine.

It is a good machine and not too noisy. So I am very happy. Well I wasn't expect it at all to get this stand mixer from my friend. I always think to get this kind of machine. I just think my self that I want a kenwood stand mixer for Christmas. My hubby asked what I want to Christmas so I think it would be a good idea to put it on the list. Well now I have one. Red colour is always one of my favorite :-)


Pistachio and Cranberry Biscotti Recipe

5 egg (medium size) 
575g white flour 
375g sugar 
100g dried cranberries 
70g pistachio
1 1/2 teaspoon baking soda 
1 teaspoon vanilla sugar orange zest from 1 orange 
5 tablespoon of orange juice 
1 teaspoon vanilli extract 

This is how you do it:
Mix eggs and sugar together in 10 minutes then blend good all the stuffs together. Don't worry it will work.

Get a parchment paper and divede to 2 long sausages. Set in the middle of oven for 15mins in 180C and the other 15mins in 160C.

Set aside and cut into a slice about 1cm thickness. place it back to oven in 8 mins with temperature 150C. Do this each side and voila! ps. this biscotti dough is a wet dought I just use spatula to help me to form it.

Homemade Almond Milk

I was stumble when I'm searching something on the internet and it was how to make your almond milk. Hmm..to be frankly I've never heard about almond milk. It is something new for me. So I used pinterest and youtube to find it out more about this alternative milk. It's very easy to make and hey...we have lots almond her in the store whole year. So why not making this one 😉 This is recipe that I used. 1 cup almond (soak in water one night or min.3 hours) 3-4 cups water wash your almonds before you mix it with your blender. Mix almonds and water in about 1 min. Use cheese cloth to seperate from the pulp and voila! you just make your own almond milk. Enjoy! ps. you can refrigerate it 3-4 days or even a week if you have a good refrigerator.

Autumn in Harstad

Here comes autumn with feel of winter in the same time. This autumn was fine. I went out in the woods to find wild mushrooms often in this autumn. I picked mostly chanties or chanterelles. It called the gold in the woods. Always happy to picked this one. I made chanties pickles for first time and it seemed I had too much vinegar in it. Don't know what I will do with it..it quite lots chanties though (1kg pickled chanties that all way too sour) The things that I didn't pick was the wild bluberries. This year seemed not the best year for those blueberries even we had a beautiful lovely summer. Well the snow is coming and covered the top of mountains and on couple of weeks it will be winter time. I do miss now summer!

Summer festival

When the sun is shining, all things become beautiful. Love life! We was in the town, today is the last day of summer festival here in Harstad. Lot's happenning in a week. Lot's people go out and enjoy the happening in the city. I bought an ice cream with oreo and enjoyed the band who played the musics.

Cakes Compilation

Well...I'm just a new blogger here 
Baking is one of my hobbies that I don't really realized before that I am actually love it.  I have a "little bit" high creativities which I called it my self. I like to draw, take pictures with my old NIKON camera, and bake and so on cook.

I think I got it from my grandmother. I remembered she had a little cafe right beside her house and she always had a plenty of customers. Lots people really loved her cook.  I never really asked her about it if she really likes to cook or if it was because the thing she had to do in order to raised all her kids (6 children). She started the business right after her husband (my grand father) died when my mother was 18 years old and I wasn't born yet. So I can tell you that I got the "little" talent in cooking and baking from her.

I had also once a little cafe by the sea where customers can see sunset  and the sea of course. I owned this little cafe with my 2 colleges friends. It was really FUN 
Anyway...I tried now to collect pictures of cakes that I made. There's many other cake pictures that I didn't take pictures just because I thought it was not necessary. Well now I do think it is necessary.

Wedding cake 2 tiers with white marzipan fondant.
the bottom tier filled with wildberries and dobble cream with a little taste of lemon
the top tier is a chocolate cake glassed with raspberry purre, filled with chocolate mousse with rum and baileys.
The weight of this cake is about 8kg. Height about 40 cm. 

Cake bun was baked with 26 cm cake form and 17 cm.

Butter Cookies

Never done before this technique. I mean how to decorate a butter cookie. Well I can tell you that it lots of F.U.N! I enjoyed it so much.

Aldri bakt eller pynt denne kjeksen før men når man får det til. Dæsken! Kor artig var det. Må bare prøve, folkens :-)





Here's the recipe in Norwegian.


KJEKS

Mørdeig

230 g meiresmør (rom temperatur)
1 egg  
180 g melis
550-650 g hvetemel og litt til kjevling
1 ½ ts bakepulver
1/2 ts salt
1 ts vaniljesukker

Pisk egg og smør ca. 2-3min. Tilsett melis og resten av ingrediensene. Røres godt sammen med slikepott.
Varm opp ovn på ca.185 grader og stek midt i ovn i ca. 8 min (kjeksen skal ikke være brun). Avkjøles før pyntes og oppbevares tørt.

Tips:
Bruk bakepapir når du skal kjevle ut deigen. Dryss litt hvetemel over deigen litt omgangen og kjevles ut som ca. 3 mm tykk.
(melet brukes slik at deigen sitter ikke fast på kjevler og for å få mindre sprekk) Bruk ønskelig kakeformer.

Glasur

360 g melis
1 dl varm vann
1 ss marengspulver (for å få luftig, smidig og ikke minst holdbar)
1 ts cream of tartar.
1ts vaniljesukker

Pisk sammen til "soft peak". (ca.2-3 min)
Glasuren skal være litt flytenes. Om det er hard, kan sprayes med vann for å få riktig konsistens.

My First Wedding Cake

My friend at work asked me a month ago if  I can make a wedding cake for her son on 7th june. First time I heard it...man, I was so nervous. I loved to bake but never make a wedding cake before and never working with the marzipan fondant. I was asking what kind a cake that you want? I was thinking maybe it just a ordinary cake for coffee and cake time on the wedding day. But the answer is NO. It is a real wedding cake. OMG!

That will be a big history for me and of course for his son and entiry family.

The story began when her son checked the weddingscake at the local bakery here in Harstad.  He was surprised that a wedding cake is really expensive and then he decided to not buy a real wedding cake and he bought a big marzipan cake with a picture of him and his girl friend. His mother heard about it and she won't let him down just because of a wedding cake. She wants to make it happen and will surprise them with a real wedding cake on their wedding day. So sweet!

What a summer day in Harstad - North of Norway

It's so beautiful weather today where is only a little tiny bit of wind which is good. I can't remember the last time I'm going out to take a little tour of walk without a jacket. It just feel totally 110% summer here in the north. Almost don't believe it but it is true. Absolutely a very very fantastic day. Loves soooo much! :-)

I found a bunch of poppies flowers and another small white flowers, not so far from the sea. I'm not quite sure they called. Anyway it's called "valmue blomster" in norwegian (the big flowers)

Clear blue sky with mountains on the background and a bit snow up in the mountains.
