Pistachio and cranberries biscotti with a hit of orange zest

It's thursday night now and after cleaned up my kitchen becoz I need place for a red bosch stand mixer that I've just got from a friend of mine who leaving Norway for good. Then I thought to bake a biscotti for a chritsmas gift and try the machine.

It is a good machine and not too noisy. So I am very happy. Well I wasn't expect it at all to get this stand mixer from my friend. I always think to get this kind of machine. I just think my self that I want a kenwood stand mixer for Christmas. My hubby asked what I want to Christmas so I think it would be a good idea to put it on the list. Well now I have one. Red colour is always one of my favorite :-)


Pistachio and Cranberry Biscotti Recipe

5 egg (medium size) 
575g white flour 
375g sugar 
100g dried cranberries 
70g pistachio
1 1/2 teaspoon baking soda 
1 teaspoon vanilla sugar orange zest from 1 orange 
5 tablespoon of orange juice 
1 teaspoon vanilli extract 

This is how you do it:
Mix eggs and sugar together in 10 minutes then blend good all the stuffs together. Don't worry it will work.

Get a parchment paper and divede to 2 long sausages. Set in the middle of oven for 15mins in 180C and the other 15mins in 160C.

Set aside and cut into a slice about 1cm thickness. place it back to oven in 8 mins with temperature 150C. Do this each side and voila! ps. this biscotti dough is a wet dought I just use spatula to help me to form it.
